Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 carrots Carrots, sliced
  • 2 stalks Celery, sliced
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • 1 lb Gnocchi
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Basil
  • to taste Salt and Pepper
  • 2 cups Spinach, fresh

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, minced garlic, sliced carrots, and celery. Cook until vegetables are tender.
  3. Pour in vegetable broth and coconut milk. Bring to a simmer.
  4. Add gnocchi, dried thyme, and dried basil. Cook until gnocchi are tender.
  5. Season with salt and pepper to taste. Stir in fresh spinach until wilted.
  6. Serve hot and enjoy!
