Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion, minced garlic, sliced carrots, and celery. Cook until vegetables are tender.
Pour in vegetable broth and coconut milk. Bring to a simmer.
Add gnocchi, dried thyme, and dried basil. Cook until gnocchi are tender.
Season with salt and pepper to taste. Stir in fresh spinach until wilted.
Serve hot and enjoy!
