Chicken and Rice Casserole Recipe
A hearty and comforting vegan chicken and rice casserole.

Main Ingredients
- 1 cup uncooked rice
- 1 cup vegan chicken substitute cubed
- 2 cups vegetable broth
- 1 cup frozen mixed vegetables
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- to taste salt and pepper
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the uncooked rice, vegan chicken substitute, vegetable broth, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper.
Pour the mixture into a baking dish and cover with aluminum foil.
Bake in the preheated oven for 45 minutes, or until the rice is cooked through and the liquid is absorbed.
Remove from the oven and let it sit for 5 minutes before serving.
