Ingredients 

Main Ingredients

  • 1 cup Rice uncooked
  • 1 cup Carrots diced
  • 1 cup Celery diced
  • 1 cup Onion diced
  • 2 cloves Garlic minced
  • 6 cups Vegetable Broth
  • 1 cup Cooked Chickpeas
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Parsley

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the onions, carrots, and celery. Cook until softened, about 5 minutes.
  2. 2. Add the garlic and cook for another minute.
  3. 3. Pour in the vegetable broth and bring to a boil.
  4. 4. Add the rice, chickpeas, thyme, parsley, salt, and pepper. Reduce heat and let simmer for 20-25 minutes, or until the rice is cooked.
  5. 5. Adjust seasoning as needed and serve hot.
