Ingredients 

Main Ingredients

  • 1 cup rice
  • 0.5 cup tofu, diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 6 cups vegetable broth
  • 2 tablespoon soy sauce
  • 1 tablespoon oil
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)
  • Lemon wedges (for garnish)

Instructions 

  1. Heat oil in a pot over medium heat. Sauté onion, garlic, and ginger until fragrant.
  2. Add tofu and cook until slightly browned.
  3. Stir in rice and soy sauce, mixing well.
  4. Pour in vegetable broth and bring to a boil.
  5. Lower heat and simmer for 30-40 minutes, stirring occasionally, until rice is cooked and the mixture thickens.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with green onions and lemon wedges.
