Ingredients

  • 2 cups Shredded vegan chicken
  • 1 cup Enchilada sauce
  • 8 Tortillas
  • 1 cup Vegan cheese
  • 1 cup Diced bell peppers
  • 1 cup Diced onions

Instructions 

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a mixing bowl, combine shredded vegan chicken, diced bell peppers, and diced onions.
  3. 3. Pour half of the enchilada sauce into the mixture and stir well.
  4. 4. Fill each tortilla with the mixture and roll them up. Place them seam-side down in a baking dish.
  5. 5. Pour the remaining enchilada sauce over the rolled tortillas.
  6. 6. Sprinkle vegan cheese on top.
  7. 7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  8. 8. Serve hot and enjoy!
