Ingredients 

Main Ingredients

  • 1 cup chickpeas, cooked
  • ½ cup cucumber, diced
  • ½ cup tomatoes, diced
  • ¼ cup red onion, thinly sliced
  • ¼ cup vegan yogurt
  • 2 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 pita breads

Instructions 

  1. In a bowl, mix chickpeas, cucumber, tomatoes, and red onion.
  2. In another bowl, combine vegan yogurt, lemon juice, olive oil, garlic, oregano, salt, and pepper.
  3. Mix the dressing with the chickpea mixture.
  4. Warm the pita breads.
  5. Fill the pitas with the chickpea mixture.
