Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Mushrooms, sliced
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 4 cups Vegetable Broth
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 cup Coconut Milk

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onions and garlic, sauté until translucent.
  3. Add mushrooms, carrots, and celery. Cook for 5-7 minutes.
  4. Pour in vegetable broth, add thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Stir in coconut milk and cook for another 5 minutes.
  7. Serve hot.
