Ingredients 

Main Ingredients

  • 200 g Pasta any type
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • 1 cup Bell pepper diced
  • 1 cup Vegan chicken strips cooked and chopped
  • ¼ cup Olive oil
  • 2 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. Cook the pasta according to package instructions. Drain and let it cool.
  2. 2. In a large mixing bowl, combine the pasta, cherry tomatoes, cucumber, bell pepper, and vegan chicken strips.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and black pepper.
  4. 4. Pour the dressing over the pasta mixture and toss to combine.
  5. 5. Serve immediately or refrigerate for later.
