Instructions
Heat olive oil in a pan over medium heat.
Add sliced onions and bell peppers. Cook until soft.
Add shredded vegan chicken to the pan. Cook for 5 minutes.
Lay tortillas flat. Spread vegan cheese evenly on one half of each tortilla.
Add the cooked mixture on top of the cheese. Fold tortillas in half.
Cook each quesadilla in a pan until golden brown on both sides.
Serve with salsa and chopped cilantro on top.
