Ingredients 

Main Ingredients

  • 1 cup shredded vegan chicken
  • 1 cup vegan cheese
  • 4 large tortillas
  • ½ cup salsa
  • ¼ cup chopped cilantro
  • ½ cup sliced bell peppers
  • ½ cup sliced onions
  • 1 tablespoon olive oil

Instructions 

  1. Heat olive oil in a pan over medium heat.
  2. Add sliced onions and bell peppers. Cook until soft.
  3. Add shredded vegan chicken to the pan. Cook for 5 minutes.
  4. Lay tortillas flat. Spread vegan cheese evenly on one half of each tortilla.
  5. Add the cooked mixture on top of the cheese. Fold tortillas in half.
  6. Cook each quesadilla in a pan until golden brown on both sides.
  7. Serve with salsa and chopped cilantro on top.
