Ingredients 

Main Ingredients

  • 2 cups vegetable broth
  • 1 cup water
  • 1 block tofu, cubed
  • 2 packs ramen noodles (discard seasoning)
  • 1 cup sliced mushrooms
  • 1 cup baby spinach
  • 1 carrot julienned
  • 2 green onions chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • Salt and pepper to taste

Instructions 

  1. In a pot, heat sesame oil over medium heat. Add garlic and ginger, sauté for 1 minute.
  2. Add vegetable broth and water, bring to a boil.
  3. Add tofu, mushrooms, and soy sauce. Cook for 5 minutes.
  4. Add ramen noodles, cook according to package instructions.
  5. Stir in spinach, carrots, and green onions. Cook for another 2 minutes.
  6. Season with salt and pepper to taste. Serve hot.
