Ingredients 

Main Ingredients

  • 1 can Chickpeas drained and rinsed
  • ¼ cup Vegan mayo
  • 1 tablespoon Dijon mustard
  • 1 stalk Celery chopped
  • ¼ cup Red onion finely chopped
  • 1 tablespoon Lemon juice freshly squeezed
  • ½ teaspoon Garlic powder
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper
  • 8 slices Whole grain bread toasted
  • 1 cup Lettuce for serving
  • 1 cup Tomato sliced, for serving

Instructions 

  1. 1. In a mixing bowl, mash the chickpeas with a fork until chunky.
  2. 2. Add vegan mayo, Dijon mustard, celery, red onion, lemon juice, garlic powder, salt, and black pepper. Mix well.
  3. 3. Spread the mixture onto toasted whole grain bread slices.
  4. 4. Add lettuce and tomato slices. Top with another slice of bread.
  5. 5. Serve immediately and enjoy!
