Ingredients 

Main Ingredients

  • 1 cup chickpeas, cooked
  • ½ cup corn kernels
  • ½ cup diced tomatoes
  • ¼ cup diced red onion
  • ¼ cup chopped cilantro
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 8 small tortillas
  • Lime wedges for serving

Instructions 

  1. Heat olive oil in a pan over medium heat.
  2. Add chickpeas, corn, tomatoes, and red onion. Cook for 5 minutes.
  3. Stir in cumin, paprika, salt, and pepper. Cook for another 5 minutes.
  4. Warm tortillas in a separate pan.
  5. Fill tortillas with chickpea mixture.
  6. Garnish with cilantro and serve with lime wedges.
