Ingredients 

Main Ingredients

  • 200 g Udon noodles
  • 1 cup Mushrooms, sliced
  • 1 cup Carrots, julienned
  • 1 cup Spinach
  • 4 cups Vegetable broth
  • 2 tablespoon Soy sauce
  • 1 teaspoon Sesame oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • to taste Salt and pepper

Instructions 

  1. 1. Cook udon noodles according to package instructions. Drain and set aside.
  2. 2. In a pot, heat sesame oil over medium heat. Add garlic and ginger, sauté for 1-2 minutes.
  3. 3. Add mushrooms and carrots, cook for another 3-4 minutes.
  4. 4. Pour in vegetable broth and soy sauce. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. 5. Add spinach and cooked udon noodles to the pot. Cook for another 2-3 minutes until spinach is wilted.
  6. 6. Season with salt and pepper to taste. Serve hot.
