Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 6 cups vegetable broth
  • 1 cup green beans, chopped
  • 1 cup corn kernels
  • 1 cup peas
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic, thyme, rosemary, and bay leaf. Cook for another minute.
  4. Pour in vegetable broth and bring to a boil.
  5. Add green beans, corn, and peas. Simmer for 20 minutes.
  6. Season with salt and pepper to taste. Remove bay leaf before serving.
