Ingredients 

Main Ingredients

  • 1 can Chickpeas drained and rinsed
  • 1 cup Cherry Tomatoes halved
  • ½ cup Cucumber diced
  • ¼ cup Red Onion finely chopped
  • ¼ cup Feta Cheese crumbled
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Dried Oregano
  • Salt and Pepper to taste

Instructions 

  1. In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, and feta cheese.
  2. In a small bowl, whisk together the olive oil, lemon juice, and dried oregano. Season with salt and pepper to taste.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or refrigerate for up to 2 hours to let the flavors meld.
