Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper
  • 2 cans chickpeas, drained and rinsed
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 4 cups fresh spinach
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened.
  2. Add garlic, cumin, coriander, smoked paprika, and cayenne pepper. Cook for another minute.
  3. Add chickpeas, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Stir in spinach and cook until wilted. Season with salt and pepper.
