Chickpea and Vegetable Stew

Main Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1 can chickpeas, drained and rinsed 15 oz
- 1 can diced tomatoes 14.5 oz
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until soft.
Add carrots, celery, bell pepper, and zucchini. Cook for 5-7 minutes.
Stir in chickpeas, diced tomatoes, and vegetable broth.
Add cumin, paprika, salt, and pepper. Bring to a boil.
Reduce heat and simmer for 20 minutes.
Garnish with fresh parsley before serving.
