Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 can chickpeas, drained and rinsed 15 oz
  • 1 can diced tomatoes 14.5 oz
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add carrots, celery, bell pepper, and zucchini. Cook for 5-7 minutes.
  4. Stir in chickpeas, diced tomatoes, and vegetable broth.
  5. Add cumin, paprika, salt, and pepper. Bring to a boil.
  6. Reduce heat and simmer for 20 minutes.
  7. Garnish with fresh parsley before serving.
