Chickpea and Vegetable Tagine

Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground turmeric
  • 0.25 teaspoon cayenne pepper
  • 1 large carrot, chopped
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 can chickpeas, drained and rinsed 400g can
  • 1 can diced tomatoes 400g can
  • 1 cup vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the ground cumin, coriander, cinnamon, turmeric, and cayenne pepper. Cook for another minute.
  3. Add the carrot, red bell pepper, and zucchini. Cook for 5 minutes, stirring occasionally.
  4. Add the chickpeas, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
