  • 2 cups cooked chickpeas
  • 1 cup quinoa cooked
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 avocado sliced
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. Cook the quinoa according to package instructions.
  2. 2. In a large mixing bowl, combine the cooked chickpeas, quinoa, cherry tomatoes, cucumber, and avocado.
  3. 3. Drizzle with olive oil and lemon juice. Season with salt and black pepper. Toss to combine.
