  • 1 tablespoon oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 teaspoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 can chickpeas, drained and rinsed 15 oz
  • 1 can diced tomatoes 14 oz
  • 1 can coconut milk 14 oz
  • to taste Salt
  • for garnish Fresh cilantro, chopped

Instructions 

  1. Heat oil in a pot over medium heat. Add onion, garlic, and ginger. Sauté until onion is translucent.
  2. Add curry powder, cumin, and coriander. Cook for another minute.
  3. Add chickpeas, tomatoes, and coconut milk. Stir well.
  4. Bring to a simmer and cook for 15-20 minutes until the sauce thickens.
  5. Season with salt to taste.
  6. Garnish with fresh cilantro before serving.
