  • 1 cup chickpea flour
  • 1 cup water
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • 1 teaspoon rosemary optional

Instructions 

  1. Preheat oven to 450°F (230°C).
  2. In a mixing bowl, whisk together chickpea flour, water, olive oil, and salt until smooth.
  3. Let the batter rest for at least 30 minutes.
  4. Heat a cast-iron skillet in the oven for 5 minutes.
  5. Remove skillet from oven and add a tablespoon of olive oil to coat the bottom.
  6. Pour the batter into the skillet and spread evenly.
  7. Bake for 15-20 minutes until the edges are crispy and the top is golden brown.
  8. Remove from oven, sprinkle with rosemary if using, and serve warm.
