Instructions
Preheat oven to 450°F (230°C).
In a mixing bowl, whisk together chickpea flour, water, olive oil, and salt until smooth.
Let the batter rest for at least 30 minutes.
Heat a cast-iron skillet in the oven for 5 minutes.
Remove skillet from oven and add a tablespoon of olive oil to coat the bottom.
Pour the batter into the skillet and spread evenly.
Bake for 15-20 minutes until the edges are crispy and the top is golden brown.
Remove from oven, sprinkle with rosemary if using, and serve warm.
