Ingredients 

Main Ingredients

  • 1 can Chickpeas drained and rinsed
  • ¼ cup Vegan mayo
  • 1 tablespoon Dijon mustard
  • 1 Celery stalk chopped
  • 1 Green onion chopped
  • 1 teaspoon Lemon juice
  • ½ teaspoon Garlic powder
  • ¼ teaspoon Salt
  • ¼ teaspoon Black pepper
  • 8 slices Bread whole grain or your choice
  • Lettuce optional, for serving
  • Tomato slices optional, for serving

Instructions 

  1. 1. In a bowl, mash the chickpeas with a fork until chunky.
  2. 2. Add the vegan mayo, Dijon mustard, celery, green onion, lemon juice, garlic powder, salt, and black pepper. Mix well.
  3. 3. Spread the chickpea mixture onto slices of bread. Add lettuce and tomato if desired.
  4. 4. Top with another slice of bread. Serve and enjoy!
