Chickpea Spinach Portobello Mushrooms Recipe

- 1 can chickpeas drained and rinsed
- 2 cups fresh spinach
- 4 large portobello mushrooms
- 2 cloves garlic minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Preheat oven to 375°F (190°C).
Clean portobello mushrooms and remove stems.
Heat olive oil in a pan over medium heat. Add garlic and sauté until fragrant.
Add chickpeas and spinach to the pan. Cook until spinach is wilted.
Season with salt and pepper.
Stuff portobello mushrooms with the chickpea-spinach mixture.
Place stuffed mushrooms on a baking sheet and bake for 20 minutes.
