Chickpea Spinach Salad

Main Ingredients
- 2 cups Chickpeas cooked and drained
- 4 cups Spinach fresh, washed
- 1 cup Cherry Tomatoes halved
- 1 unit Cucumber diced
- 1 tablespoon Olive Oil
- 1 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
In a large mixing bowl, combine chickpeas, spinach, cherry tomatoes, and cucumber.
Drizzle with olive oil and lemon juice.
Season with salt and black pepper to taste.
Toss everything together until well mixed.
Serve immediately or refrigerate for later.
