Ingredients 

Main Ingredients

  • 4 bell peppers
  • 1 can chickpeas, drained and rinsed
  • 2 cups fresh spinach, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • ¼ cup vegetable broth

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a pan, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  4. Add chickpeas, spinach, cumin, paprika, salt, and pepper. Cook for 5 minutes.
  5. Add vegetable broth and cook for another 2 minutes.
  6. Stuff the bell peppers with the chickpea mixture.
  7. Place stuffed peppers in a baking dish and bake for 30 minutes.
