  • 1 can Chickpeas drained and rinsed
  • 2 cups Spinach fresh
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic Powder
  • 8 pieces Taco Shells

Instructions 

  1. 1. Heat olive oil in a skillet over medium heat.
  2. 2. Add chickpeas, cumin, paprika, and garlic powder. Cook for 5-7 minutes.
  3. 3. Add spinach and cook until wilted, about 2-3 minutes.
  4. 4. Warm taco shells according to package instructions.
  5. 5. Fill taco shells with chickpea and spinach mixture. Serve immediately.
