chickpeas, drained and rinsed

vegetable broth

spinach, chopped
Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic, ground cumin, ground coriander, and paprika. Cook for another minute.
Add diced tomatoes, chickpeas, vegetable broth, salt, and black pepper. Bring to a boil.
Reduce heat and let it simmer for 20 minutes.
Add chopped spinach and cook for another 5 minutes.
Serve hot and enjoy!
