Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 can diced tomatoes
  • 2 cans chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup spinach, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic, ground cumin, ground coriander, and paprika. Cook for another minute.
  4. Add diced tomatoes, chickpeas, vegetable broth, salt, and black pepper. Bring to a boil.
  5. Reduce heat and let it simmer for 20 minutes.
  6. Add chopped spinach and cook for another 5 minutes.
  7. Serve hot and enjoy!
