Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 1 can chickpeas, drained and rinsed
  • 2 tablespoon soy sauce
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Cooked rice or quinoa, for serving

Instructions 

  1. Heat olive oil in a large pan over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add bell peppers, zucchini, and broccoli. Cook until tender.
  4. Stir in chickpeas, soy sauce, cumin, salt, and pepper. Cook for another 5 minutes.
  5. Serve over cooked rice or quinoa.
