Ingredients 

Main Ingredients

  • 1 can Chickpeas drained and rinsed
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 clove Garlic minced
  • 4 pieces Tortillas whole wheat or gluten-free
  • 1 cup Lettuce shredded
  • 1 cup Tomatoes diced
  • 1 cup Cucumber diced

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add the minced garlic and cook for 1-2 minutes until fragrant.
  3. 3. Add the chickpeas, cumin, and paprika. Cook for 5-7 minutes, stirring occasionally.
  4. 4. Warm the tortillas in a separate skillet or microwave.
  5. 5. Assemble the wraps by placing a portion of the chickpea mixture onto each tortilla, followed by lettuce, tomatoes, and cucumber.
  6. 6. Roll up the tortillas and serve immediately.
