Main Ingredients
- 2 tablespoon Olive Oil
- 1 large Onion, diced
- 3 cloves Garlic, minced
- 2 cups Diced Tomatoes
- 2 cups Vegetable Broth
- 2 cups Potatoes, diced
- 1 cup Kidney Beans, cooked
- 1 cup Corn Kernels
- 1 teaspoon Chili Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
1. Heat the olive oil in a large pot over medium heat.
2. Add the diced onion and cook until translucent, about 5 minutes.
3. Stir in the minced garlic and cook for another minute.
4. Add the diced tomatoes, vegetable broth, and potatoes. Bring to a boil.
5. Reduce heat and let it simmer for 20 minutes, or until potatoes are tender.
6. Stir in the kidney beans, corn, chili powder, cumin, salt, and black pepper. Simmer for another 10 minutes.
7. Adjust seasoning to taste and serve hot.
