Main Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 cups canned tomatoes
- 1 cup vegetable broth
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 2 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
1. Heat the olive oil in a large pot over medium heat.
2. Add the diced onion and cook until translucent, about 5 minutes.
3. Add the minced garlic and diced bell pepper, cook for another 5 minutes.
4. Stir in the canned tomatoes, vegetable broth, black beans, and kidney beans.
5. Add the chili powder, cumin, paprika, salt, and black pepper. Stir well.
6. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.
7. Serve hot and enjoy!
