Ingredients 

Salad Ingredients

  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 bell pepper, diced
  • ¼ cup red onion, thinly sliced

Dressing Ingredients

  • ¼ cup olive oil
  • 2 tablespoon balsamic vinegar
  • to taste Salt and pepper

Instructions 

  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, bell pepper, and red onion.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  3. Pour dressing over the salad and toss to combine.
  4. Chill in the refrigerator for 10 minutes before serving.
