Ingredients 

Main Ingredients

  • 2 cups Black Beans cooked or canned
  • 1 tablespoon Olive Oil
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Oregano
  • 1 chipotle pepper Chipotle Pepper in Adobo Sauce chopped
  • 1 cup Vegetable Broth
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. Heat olive oil in a saucepan over medium heat.
  2. Add diced onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic, ground cumin, and dried oregano. Cook for another minute.
  4. Add the chopped chipotle pepper and cook for another minute.
  5. Add black beans and vegetable broth. Stir to combine.
  6. Bring to a simmer and cook for 10-15 minutes, until the liquid is reduced and the beans are heated through.
  7. Season with salt and black pepper to taste. Serve warm.
