Pancake Batter
- 1 cup All-purpose flour
- 1 tablespoon Sugar
- 2 teaspoons Baking powder
- ⅛ teaspoon Salt
- 1 cup Almond milk or any plant-based milk
- 1 tablespoon Apple cider vinegar
- 1 teaspoon Vanilla extract
- ½ cup Vegan chocolate chips
In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, mix the almond milk and apple cider vinegar. Let it sit for a few minutes to curdle.
Add the vanilla extract to the milk mixture.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Fold in the vegan chocolate chips.
Heat a non-stick pan over medium heat. Pour ¼ cup of batter onto the pan for each pancake.
Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
Serve warm with your favorite toppings.
