Scone Ingredients
- 2 cups All-purpose flour
- ⅓ cup Sugar
- 1 tablespoon Baking powder
- ½ teaspoon Salt
- ½ cup Vegan butter cold and cubed
- 1 cup Vegan chocolate chips
- 1 teaspoon Vanilla extract
- ½ cup Non-dairy milk plus more for brushing
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
Add the cold vegan butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
Stir in the chocolate chips.
In a small bowl, mix the vanilla extract and non-dairy milk. Pour into the dry ingredients and stir until just combined.
Turn the dough out onto a floured surface and shape into a circle about 1 inch thick. Cut into 8 wedges and place on the prepared baking sheet.
Brush the tops with a little non-dairy milk.
Bake for 18-20 minutes, or until golden brown. Let cool slightly before serving.
