Main Ingredients
- 200 g dark chocolate finely chopped
- 120 ml coconut milk full-fat
- 1 teaspoon vanilla extract
- 1 pinch salt
- 50 g cocoa powder for coating
1. Heat the coconut milk in a saucepan until it just begins to simmer.
2. Pour the hot coconut milk over the chopped dark chocolate in a mixing bowl. Let it sit for a minute, then whisk until smooth.
3. Stir in the vanilla extract and a pinch of salt. Let the mixture cool to room temperature, then refrigerate for about 2 hours or until firm.
4. Scoop out small amounts of the mixture and roll into balls. Coat each truffle in cocoa powder.
5. Store the truffles in the refrigerator until ready to serve.
