Ingredients 

Main Ingredients

  • 2 tablespoon Olive oil
  • 1 large Onion, diced
  • 2 cloves Garlic, minced
  • 3 cups Vegetable broth
  • 2 cups Potatoes, diced
  • 1 cup Corn kernels
  • 1 cup Coconut milk
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add vegetable broth and diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. Add corn kernels and coconut milk. Cook for another 5 minutes.
  6. Season with salt and pepper to taste. Serve hot.
