Vegetables
- 2 cups Brussels sprouts, halved
- 2 cups Carrots, sliced
- 2 cups Potatoes, cubed
- 1 cup Red bell pepper, sliced
- 2 tablespoon Olive oil
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 1 teaspoon Dried rosemary
- 1 teaspoon Dried thyme
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine all the vegetables.
Add olive oil, salt, pepper, rosemary, and thyme. Toss to coat evenly.
Spread the vegetables evenly on a baking sheet.
Roast in the preheated oven for 45 minutes, stirring halfway through, until vegetables are tender and golden brown.
Serve warm and enjoy!
