Ingredients 

Vegetables

  • 2 cups Brussels sprouts, halved
  • 2 cups Carrots, sliced
  • 2 cups Potatoes, cubed
  • 1 cup Red bell pepper, sliced
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Dried thyme

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine all the vegetables.
  3. Add olive oil, salt, pepper, rosemary, and thyme. Toss to coat evenly.
  4. Spread the vegetables evenly on a baking sheet.
  5. Roast in the preheated oven for 45 minutes, stirring halfway through, until vegetables are tender and golden brown.
  6. Serve warm and enjoy!
