Crust
- 1.5 cups graham cracker crumbs
- ¼ cup sugar
- ½ cup vegan butter, melted
Filling
- 3 cups vegan cream cheese
- 1 cup sugar
- 1 tablespoon vanilla extract
- 1 tablespoon cinnamon
- 2 tablespoon cornstarch
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine graham cracker crumbs, sugar, and melted vegan butter. Press the mixture into the bottom of a springform pan to form the crust.
In a blender, combine vegan cream cheese, sugar, vanilla extract, cinnamon, and cornstarch. Blend until smooth.
Pour the filling over the crust in the springform pan.
Bake for 40 minutes, or until the center is set.
Let it cool completely before serving.
