Main Ingredients
- 1 cup Long grain white rice
- 2 cups Water
- 1 tablespoon Olive oil
- 1 teaspoon Salt
- 1 cup Cilantro, chopped
- 2 tablespoon Lime juice freshly squeezed
Rinse the rice under cold water until the water runs clear.
In a saucepan, bring water to a boil. Add rice, olive oil, and salt. Stir well.
Reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender and water is absorbed.
Remove from heat and let it sit, covered, for 5 minutes.
Fluff the rice with a fork. Stir in chopped cilantro and lime juice.
Serve warm.
