Ingredients

  • 1 cup Long grain white rice
  • 2 cups Water
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 cup Cilantro, chopped
  • 2 tablespoon Lime juice freshly squeezed

Instructions 

  1. Rinse the rice under cold water until the water runs clear.
  2. In a saucepan, bring water to a boil. Add rice, olive oil, and salt. Stir well.
  3. Reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender and water is absorbed.
  4. Remove from heat and let it sit, covered, for 5 minutes.
  5. Fluff the rice with a fork. Stir in chopped cilantro and lime juice.
  6. Serve warm.
