Ingredients 

Main Ingredients

  • 1 cup couscous
  • 1 cup water boiling
  • 1 tablespoon olive oil
  • 1 orange zested and juiced
  • 1 lemon zested and juiced
  • ½ cup chopped fresh parsley
  • ¼ cup chopped fresh mint
  • ¼ cup chopped red onion
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • to taste salt and pepper

Instructions 

  1. 1. In a saucepan, bring water to a boil. Add couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  2. 2. In a mixing bowl, whisk together olive oil, orange juice, lemon juice, orange zest, and lemon zest.
  3. 3. Add the couscous to the bowl along with parsley, mint, red onion, cherry tomatoes, and cucumber. Toss to combine.
  4. 4. Season with salt and pepper to taste. Serve chilled or at room temperature.
