Citrus Kale Quinoa Salad

Main Ingredients
- 1 cup Quinoa rinsed
- 2 cups Water
- 4 cups Kale chopped
- 1 Orange peeled and segmented
- 1 Lemon juiced
- 2 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper freshly ground
1. Cook the quinoa: In a saucepan, bring the water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork and let it cool.
2. Prepare the dressing: In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
3. Assemble the salad: In a large mixing bowl, combine the cooked quinoa, chopped kale, and orange segments. Pour the dressing over the salad and toss to combine.
4. Serve: Serve immediately or refrigerate for up to 2 days.
