Ingredients

  • 1 lb Shrimp peeled and deveined
  • 2 Avocados diced
  • 1 Orange juiced
  • 1 Lime juiced
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. 1. In a mixing bowl, combine shrimp with orange juice, lime juice, olive oil, salt, and pepper. Let it marinate for 10 minutes.
  2. 2. Heat a skillet over medium heat. Cook the shrimp for 2-3 minutes on each side until pink and opaque.
  3. 3. In a large bowl, combine diced avocados, cherry tomatoes, cucumber, and cooked shrimp.
  4. 4. Toss everything gently to mix. Serve immediately.
