Ingredients

  • 6 medium potatoes peeled and diced
  • 1 cup vegan mayonnaise
  • 1 tablespoon mustard
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 2 stalks celery chopped
  • 1 small red onion finely chopped
  • 2 tablespoon dill chopped

Instructions 

  1. 1. Boil the potatoes in a large pot of salted water until tender, about 10 minutes. Drain and let cool.
  2. 2. In a mixing bowl, combine the vegan mayonnaise, mustard, salt, and black pepper.
  3. 3. Add the cooled potatoes, celery, red onion, and dill to the bowl. Mix until well combined.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
