  • 1 cup black rice
  • 2 cups water
  • 1 cup coconut milk
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions 

  1. Rinse the black rice under cold water.
  2. In a saucepan, combine the rice and water. Bring to a boil, then reduce heat to low and simmer for 30 minutes.
  3. Add the coconut milk, sugar, vanilla extract, and salt. Stir well and cook for another 10 minutes, until the mixture thickens.
  4. Remove from heat and let cool slightly before serving.
