Ingredients 

Crust

  • 1.5 cups Almond Flour
  • 0.25 cup Coconut Oil melted
  • 2 tablespoons Maple Syrup

Filling

  • 1 cup Coconut Milk full-fat
  • 0.5 cup Coconut Sugar
  • 2 tablespoons Cornstarch mixed with 2 tablespoons water
  • 1 teaspoon Vanilla Extract

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, melted coconut oil, and maple syrup. Press the mixture into a tart pan to form the crust.
  3. Bake the crust for 10 minutes, then let it cool.
  4. In a saucepan, combine coconut milk and coconut sugar. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Add the cornstarch mixture and vanilla extract to the saucepan. Cook until thickened, stirring constantly.
  6. Pour the filling into the cooled crust. Refrigerate for at least 2 hours before serving.
