Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 1 tablespoon Curry Powder
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 1 can Coconut Milk 400 ml
  • 1 cup Vegetable Broth
  • 2 cups Chickpeas, cooked
  • 1 cup Tomatoes, diced
  • 1 cup Spinach, chopped
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, cook until translucent.
  3. Add minced garlic and grated ginger, cook for another minute.
  4. Stir in curry powder, turmeric, and cumin. Cook for 2 minutes.
  5. Add coconut milk and vegetable broth. Bring to a simmer.
  6. Add chickpeas and diced tomatoes. Cook for 10 minutes.
  7. Stir in chopped spinach. Cook until wilted.
  8. Season with salt and black pepper to taste. Serve hot.
