Ingredients 

Crust

  • 1.5 cups Graham cracker crumbs
  • cup Coconut oil, melted
  • 2 tablespoon Maple syrup

Filling

  • 1 can Coconut milk, full-fat 400 ml
  • ½ cup Coconut cream
  • cup Maple syrup
  • ¼ cup Cornstarch
  • 1 teaspoon Vanilla extract
  • ¼ teaspoon Salt

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted coconut oil, and maple syrup. Mix well.
  3. Press the mixture into a pie dish to form the crust. Bake for 10 minutes, then let it cool.
  4. In a saucepan, combine coconut milk, coconut cream, maple syrup, cornstarch, vanilla extract, and salt. Whisk until smooth.
  5. Cook over medium heat, stirring constantly, until the mixture thickens. Pour into the cooled crust.
  6. Refrigerate for at least 4 hours before serving.
