Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoon Curry powder
  • 1 can Coconut milk
  • 2 cups Vegetable broth
  • 1 can Chickpeas, drained and rinsed
  • 2 cups Spinach
  • to taste Salt and pepper

Instructions 

  1. 1. Heat the olive oil in a large saucepan over medium heat.
  2. 2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. 3. Stir in the minced garlic and ginger, cooking for another minute.
  4. 4. Add the curry powder and cook for another 2 minutes, stirring constantly.
  5. 5. Pour in the coconut milk and vegetable broth, bringing the mixture to a simmer.
  6. 6. Add the chickpeas and let it simmer for 15 minutes.
  7. 7. Stir in the spinach and cook until wilted, about 2 minutes.
  8. 8. Season with salt and pepper to taste.
