Coconut Curry Ramen
A delicious and comforting vegan coconut curry ramen.

Main Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoon red curry paste
- 1 can coconut milk
- 4 cups vegetable broth
- 1 tablespoon soy sauce
- 1 tablespoon maple syrup
- 200 g ramen noodles
- 1 cup spinach
- 1 lime, cut into wedges
Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent.
Add minced garlic and ginger, cook for another minute.
Stir in red curry paste and cook for another minute.
Add coconut milk, vegetable broth, soy sauce, and maple syrup. Bring to a boil.
Add ramen noodles and cook according to package instructions.
Stir in spinach until wilted.
Serve hot with lime wedges on the side.
